Harvesting Sweet Potatoes

Earlier this spring, we ordered sweet potato slips from an online distributor. I neglected to put them in the ground right away and by the time I got around to doing it, the slips looked almost dead. I read somewhere that they were hardy plants and that they were hard to kill or plant the wrong way.

I trusted that information.

I put 12 half dead plants in the ground and waited. By mid summer, they appeared to be doing well and I had a bit of confidence that they would survive.

Survive they did.

We harvested all of them yesterday and gleaned a plethora of sweet potatoes.

Our bounty spilleth over, and that is a good thing because our family goes through lots of sweet potatoes.

Scroll to the bottom and you will find a video of my husband pulling out our biggest sweet potato. It was a nice score!

P.S. – notice all of us wearing lots of cold weather articles of clothing, my son in a big puffy jacket and his dad’s beanie, my daughter in a jacket, and myself….well I had on my long sleeve shirt, my husband’s long sleeve shirt, a jacket….and a scarf.

Yeah…I don’t get along with this weather much.

Then there is my husband…wearing a t-shirt….and that’s it. A ripped one at that.

Sigh. I don’t know how he does it.
